Eggs Mimosa Style with Fresh Prawns

for 2 persons

 

 

 

2 eggs per person

200 g of fresh prawns

mayonnaise

salad leaves for garnish

 

 

  1. Put the eggs in a saucepan full of cold water and cook them through for 10mn after boiling
  2. Peel the prawns
  3. Once the eggs are done, put them straight away in cold water in order to avoid continuation of the cooking and to facilitate shelling
  4. Leave to cool
  5. After shelling the eggs, cut them in two lenghtwise
  6. Scoop out the egg yolks with a teaspoon and put aside
  7. Fill in the egg whites with fresh prawns
  8. Add a teaspoon of mayonnaise on top of the prawns
  9. Place salad leaves onto a flat dish and lay the eggs
  10. Finally, grate the egg yolks onto the egg whites and put in the fridge before serving this starter
